I do not make this claim lightly, this really IS the most amazing Crumble Topping in the world! Taken from a cookery book I received on a trip to New Zealand I have never found a better recipe. It can be used to as topping for a fruit crumble or baked on its own for 20-30 minutes until golden and used as a granola to sprinkle over yoghurt. I make a batch of this and store it in a container in the freezer, together with a selection of different fruit and berries and this way I can knock out a really nice dessert in literally minutes!

Ingredients
2 cups plain flour
1 cup ground almonds
1.5 cups brown sugar, tightly packed
2 cups rolled oats
1 cup flaked or chopped almonds
2 tsp mixed spice
250g melted butter
Method
- Place all the dry ingredients in a large mixing bowl (or food mixer, I use my KitchenAid) and stir well to combine.
- Add the melted butter and mix until combined.
- For crumble – Sprinkle over fruit or berries and bake in an oven for 30 minutes
- For granola – spread out on a baking sheet and bake for 20-30 minutes until golden. Allow to cool and sprinkle over yoghurt.
This can be stored in an airtight container in the fridge or freezer.
