This is a very simple recipe for delicious low carb and paleo chocolatey gooey cookies. No artificial ingredients, just honest wholefood all the way!
They take literally minutes to make and then you just have to be patient while they cook for 12 minutes and then cool down. And then you can get your chocolate fix in a healthy way! Enjoy!
1 ripe avocado
1/2 cup almond butter
1/2 cup coconut sugar
1/2 cup unsweetened cocoa powder
1 egg or chia/flax seed vegan ‘egg’
1/2 cup dark chocolate chunks
To reduce the carbs even more you can replace the coconut sugar with a low carb alternative such as erythritol or stevia.
You could also add chopped nuts as an optional extra.
Preheat oven to 180c.
Place all ingredients into the blender and combine together.
Place large spoonfuls of mixture onto baking tray lined with baking parchment.
Bake for 12 minutes.
Cool on wire cooking rack.
